Ellie was a gift to all that came to know her. She had a smile that was alluring and kind. Ellie loved adventure and never turned down an opportunity to try something new, whether it be eating the Ecuadorian delicacy Guinea Pig, a bungee jump from a bridge in a third world country, swimming with sharks in Galapagos or climbing the ruins of Machu Picchu. She loved deeply and if you were fortunate enough to be in her inner circle, she had the ability to make you feel like you were the only one. Ellie could quickly adapt to her situation and could overcome adversity and never complain. She always made the best out of every situation. She will leave an empty space in the hearts of many around the world.
Those left to cherish her memory are her brothers, Nathaniel and Joshua Hukel; sisters, Savannah Hutchison, and Nicole and Kayla Hukel; parents, Mark and Tammy Hukel, and biological parents, Brandon Simpson and Sarah Morris; grandmothers, Virginia Noah, Jane Schluter, and Tina Eslick; mother in law, Kathy Holland, and father in law, Brent Holland; and numerous uncles, aunts, cousins and friends from around the world.
